Cast iron is described by Clemson Extension as strong, inexpensive and an even heat conductor, and University of Maine Extension notes it holds heat well and can last for generations. The price of that is care: seasoning, no soaking, and drying right away to prevent rust.

Stainless steel is iron combined with chromium and sometimes nickel or other metals, which resists scratching and corrosion. On its own it does not conduct heat evenly, so good pans have copper or aluminum in the base. Neither material is a health concern in normal use according to extension guidance.

Yes, cooking in unglazed cast iron can increase the iron content of foods, Clemson Extension says. A University of Maine Extension guide adds that the amount is small compared with what bodies need daily from food.

Can I put cast iron in the dishwasher or soak it?

No. University of Maine Extension advises never soaking cast iron or using a dishwasher, and avoiding steel wool, to preserve the seasoning layer. Rinse, dry right away and oil lightly.
