Lobster vs Crawfish

Lobsters and crawfish are close cousins, both in the infraorder of clawed crustaceans, and they look like scaled versions of each other. The simplest difference is where they live: lobsters live in the ocean, and crawfish live in streams, swamps and ditches. Size follows, with lobsters many times bigger.
Names add confusion. Crawfish is also called crayfish or crawdad, depending on region, and Louisiana is the country's biggest producer. A lobster can live a very long time, while crawfish are short-lived by comparison. When cooking either, you are looking for opaque flesh, not a time on the clock.

Lobster (American)
- The animal came from salt water, and a trap or boat catch is involved.
- It is longer than a foot, with one noticeably huge pair of claws.
- It is a single animal, sold or served whole and priced each or by the pound.
- It has two claws that are far larger than any of its other legs.
Crawfish (crayfish)
- It came from a bayou, stream, swamp or ditch, in fresh water.
- It is about the length of your finger, 3 to 6 inches.
- It is cooked in large numbers together, as in a Louisiana boil.
- The claws are small and the tail is the main part you eat.

Are crawfish baby lobsters?
No. Crawfish are a separate freshwater animal, closely related to lobsters but fully grown at a few inches. Lobsters live in the ocean and grow to many pounds.
Is crawfish the same as crayfish?
Yes. Crayfish predominates in northern regions, crawdad is common in the central and southwestern states, and crawfish is typical in the South. Considerable overlap exists.
How do I know seafood is cooked?
FoodSafety.gov says to cook lobster and shrimp until the flesh is pearly or white and opaque. The same opaque-flesh check is a reasonable guide for crawfish tails.
How long do lobsters live?
Scientists think some American lobsters may live about 100 years, though exact ages are hard to determine because they shed their shells. A lobster molts 20 to 25 times over 5 to 8 years between hatching and maturity.
