Clams and oysters are both bivalve mollusks that filter feeders eat from the water, and both are sold live in the shell. They are easy to tell apart once you look closely at the shells and the way the animals live. Oysters attach to rocks and each other, while clams burrow.
The eating experience differs as well. Oysters are most often served raw on the half shell and range from sweet to briny, while clams are usually cooked in chowder, steamed, fried or baked. That raw habit carries a food-safety point: health agencies warn about Vibrio bacteria in raw oysters, especially in warm months.

Frequently asked questions
Can you eat clams raw like oysters?
Raw clams are eaten, but raw oysters are the better-known case for illness risk. The CDC says most people get vibriosis from raw or undercooked shellfish, particularly oysters. People with liver disease, cancer, diabetes or weakened immunity should avoid raw shellfish.
How do I know clams and oysters are cooked?
Cook clams, oysters and mussels until the shells open, and discard any that stay closed. That is the doneness guidance from FoodSafety.gov. Use live animals and keep them cold until cooking.
Which is bigger, a clam or an oyster?
It depends on the species. An Atlantic surfclam can reach about 9 inches, while eastern oysters are usually 3 to 5 inches and sometimes up to 8. Sizes differ a lot between species.
When are raw oysters riskiest?
The CDC says Vibrio concentrations in coastal waters peak in warmer months, from about May through October. Depuration and good handling help reduce contamination, but they do not remove all risk.
