Cast Iron vs Stainless Steel
Verdict: Pick cast iron for a cheap, long-lived pan that holds heat and builds a nonstick seasoning, if you will care for it. Pick stainless steel for low-fuss cleaning and no seasoning.
Cast iron is described by Clemson Extension as strong, inexpensive and an even heat conductor, and University of Maine Extension notes it holds heat well and can last for generations. The price of that is care: seasoning, no soaking, and drying right away to prevent rust.
Stainless steel is iron combined with chromium and sometimes nickel or other metals, which resists scratching and corrosion. On its own it does not conduct heat evenly, so good pans have copper or aluminum in the base. Neither material is a health concern in normal use according to extension guidance.
Cast Iron vs Stainless Steel side by side
| Trait | Cast Iron | Stainless Steel |
|---|---|---|
| Material | Iron, seasoned with baked-on oil | Iron with chromium, often nickel, plus aluminum or copper in the base |
| Heat conduction | Even conductor, holds heat well | Not even on its own, so pans use copper or aluminum bases |
| Nonstick surface | Seasoning layer builds up with use | None built in |
| Upkeep | Season, rinse and dry right away, oil lightly | Washes up normally; no seasoning |
| Soaking or dishwasher | Avoid both | Not restricted the same way; follow the maker label |
| Rust risk | Rusts if left wet or unoiled | Resists corrosion |
| Iron in food | Unglazed cast iron can double the iron in some foods; small compared with daily needs | No known health hazard from leaching |
| Salt and acid | Seasoning care applies | Undissolved salt can pit the surface; makers caution against long contact with acidic or salty food |
| Lifespan | Can last generations with care | Durable and scratch resistant |

Which one fits you
Cast Iron
- You want an inexpensive pan that sears well and holds heat
- You will season it and hand-wash and dry it right after use
- You like a naturally nonstick surface that improves with use
- You want cookware that can last for generations and be passed down
Stainless Steel
- You want to toss pans in the wash without worrying about rust
- You cook a lot of acidic dishes and want a no-seasoning surface
- You prefer a lighter pan with an aluminum or copper core
- You do not want to oil and maintain a coating
How this works
The quiz compares care habits and cooking style against how each material behaves, using university extension guidance. It cannot judge brands or the quality of a specific pan, and plenty of cooks own one of each. Both materials work well in the hands of a careful cook.
Cue strength differs. Care and cleaning habits are the most reliable cues, while food type and budget are softer and are noted as such in each cue. Cue strength differs. Care and cleaning habits are the most reliable cues, while food type and budget are softer and are noted as such in each cue explanation. Brand and build quality also matter.
Where these numbers come from
The figures and defaults on this page are based on:
- Clemson HGIC: Cookware Safety, Covers cast iron and stainless composition, iron content, heat and leaching. (checked October 2026)
- University of Maine Extension: Cast Iron Basics, Covers seasoning, cleaning rules, lifespan and iron contribution. (checked October 2026)
General cookware guidance. Follow the manufacturer's care instructions for your specific pan.
Frequently asked questions
Does cast iron put iron in my food?
Yes, cooking in unglazed cast iron can increase the iron content of foods, Clemson Extension says. A University of Maine Extension guide adds that the amount is small compared with what bodies need daily from food.
Can I put cast iron in the dishwasher or soak it?
No. University of Maine Extension advises never soaking cast iron or using a dishwasher, and avoiding steel wool, to preserve the seasoning layer. Rinse, dry right away and oil lightly.
Is stainless steel safe to cook with?
Clemson Extension says there are no known health hazards from metal leaching from stainless steel. Makers do caution against long contact with acidic or salty foods, and undissolved salt can pit the surface.
Why do stainless pans have aluminum or copper bottoms?
Stainless steel does not conduct heat evenly by itself. Manufacturers commonly add copper or aluminum to the base so heat spreads better.
